Honestly, I had planned another dessert for this week.

But my husband had a sudden longing for homemade mango ice cream.  It seems that his cravings came after tasting that last homemade Sweet Cream-and-Guava Ice Cream, which he loved so much.

So the plans were quickly changed.  I hope that you understand, and can pardon a little burst of spontaneity! :)

Making the ice cream base made me understand that although this is a simple dessert, it is a very delicious one, too.  With temperatures here in Texas soaring between the 90′s and 100′s Fahrenheit, this will perfectly suit his (and mine, too!) cravings for a refreshing dessert.

Besides– there’s nothing like an egg-free homemade ice cream, don’t you agree?  Ah yes, and made from a sinfully delicious tropical fruit so highly esteemed by Brazilians (and the rest of the world), as well as made from condensed milk to make that treat even creamier…. ;)

Need I say more?!  Well, I hope that I already have your forgiveness.

Mango Ice Cream with Condensed Milk

Yield: About 1-1/2 pint

Segment: Brazilian Cuisine

Ingredients:

4 large ripe mangoes (peeled, seed removed, and cut into chunks)

1-3/4 cups sugar

Fresh juice of 2 large limes (about 1/3 cup)

1-1/2 cups heavy whipping cream

7 oz (about 200 ml) sweetened condensed milk (It will make the ice cream creamier)

A pinch of salt

1/8 teaspoon pure vanilla extract

Directions:

Wrap the ice cream bowl in plastic wrap (in order to keep it clean) and freeze it for about 24 hours prior to making the ice cream.

On the following day, peel and cut the mangoes into chunks.  Then, puree very well with the sugar and the lemon juice in a food processor or blender. Strain and discard fibers.

In a bowl, combine the pureed mango with the heavy whipping cream, condensed milk, salt, and vanilla extract, stirring well until obtaining a homogeneous mixture.  Wrap it with plastic wrap and refrigerate for at least 2 hours.

Pour mixture into the ice cream maker bowl and follow the manufacturer’s instructions. Let it churn for about 25 minutes or until firm. Transfer the ice cream to an airtight container and store in the freezer for at least 6 hours before serving.  Enjoy!

Sorvete de Manga com Leite Condensado

Rendimento: Aproximadamente 700 ml

Ingredientes:

4 manga-rosas grandes e maduras (descascada e cortada em cubos)

1-3/4 xicaras de chá de açúcar

Suco fresco de 2 limões grandes (aproximadamente 1/3 xícara de chá)

1-1/2 xícaras de chá de creme de leite de caixinha

200 ml de leite condensado (para que o sorvete fique mais cremoso)

Uma pitada de sal

1/8 colher de chá de extrato de baunilha

Modo de Preparo:

Na máquina de sorvete:

Embale o container (ou balde) da máquina de sorvete com filme plástico e leve ao freezer por 24 horas.

No dia seguinte, descasque e corte as mangas. Bata muito bem no liquidificador com o açúcar e o suco de limão até obter uma mistura cremosa. Em seguida, coe na peneira.

Numa tigela, misture a manga liquidificada com o creme de leite, o leite condensado, o sal e a baunilha até obter uma mistura homogênea. Embale a tigela com filme plástico e refrigere por pelo menos 2 horas.

Despeje a mistura dentro do balde da máquina de sorvete e siga as instruções do fabricante. Deixe a mistura ser batida na máquina de sorvete por uns 25 minutos ou até obter uma consistência firme. Transfira para um depósito fechado e ponha no freezer por pelo menos 6 horas antes de servir.

Sem a máquina de sorvete:

Bata bem os 3 primeiros ingredientes no liquidificador até obter uma mistura cremosa. Coe a mistura na peneira. Em seguida, misture a manga liquidificada com o creme de leite, o leite condensado, o sal e a baunilha até obter uma mistura homogênea.

Leve ao freezer em um refratário coberto com filme plástico e ponha uma bandeja em cima para assegurar que cristais de gelo não cairão na mistura ou em um depósito plástico limpo e com tampa.

Após 45 minutos, cheque para ver se as beiradas já estão congelando. Remova do freezer e misture vigorosamente com uma espátula ou batedor. Leve de volta ao freezer e continue a checar a cada 30 minutos, sempre misturando vigorosamente com uma espátula ou batedor, até completar 2 ou 3 horas de checar, misturar e retornar ao freezer.

Feito isso, deixe congelar por mais umas 4 a 6 horas e sirva.

  1. I desperate need an ice cream machine. I know that we can freeze and then mix and freeze again…but each time I saw an ice cream with the texture of yours, makes me wanted that machine. Mangos are deliciuos, we are in winer here so I have to wait for some months to start having mangos in our market.

    • An ice cream machine is really a great investment, Nydia! Although there are several good ice creams in the market, nothing is like a homemade one. This is pretty much my second time making ice cream. There are several flavors that I still want to make. One of them will hopefully be dulce de leche with chocolate swirls.   3. Hi Denis! I’ve recently started making ice-cream at home using normal food mixer, but its not as easy as with ice creme maker, but I managed to get good result. Mango ice cream looks so delicious and tempting, Thanks for sharing this recipe !
