Satisfy Your Cravings with a One-Minute Chocolate Fudge Cake in a Mug with Black Cherry Ice Cream (Bolo de Chocolate na Caneca com Sorvete)

I love quick desserts.

This one takes literally about 1 minute to bake.  Yep!  Just 1 minute…

How wonderful is that?!

It is perfect for either satisfying a craving in the afternoon or for delighting guests after lunch or dinner.  It is moist and rich… just as desserts should be.  Don’t you agree? :)

I have to confess that this recipe is not a Brazilian one.  It is part of a new segment of my blog called From My Table To Yours.  In this segment, I will present recipes that my family enjoys, which are not necessarily Brazilian.  In fact, the recipes will come from quite a wide range of cuisines.  As you can imagine, I do not cook and enjoy solely Brazilian dishes– my family and I have a diverse palate.

I made just one big mug so that we all could share the cake…but it was hard since everyone was so delighted that each one wanted to eat it all!

I hope that this recipe also becomes one of your family favorites.

Chocolate Fudge Mug Cake with Black Cherry Ice Cream

(Segment: From My Table To Yours)

Yield: 1 large mug

Ingredients:

1/4 cup all-purpose flour

1/4 cup sugar

1/4 cup unsweetened cocoa powder

1/4 teaspoon baking powder

Pinch salt

2 tablespoons milk

2 tablespoons sweetened condensed milk

2 tablespoons oil

1 teaspoon pure vanilla extract

1/4 cup mini chocolate chips (semi-sweet or milk chocolate)

1/3 cup pitted dark sweet bing cherries in heavy syrup, drained (optional)**

** Instead of cherries, you can use 2 tablespoons of caramel, dulce de leche, peanut butter, marshamallow creme, or nutella.  In this case, drop it into the chocolate mix and push down to submerge.

Directions:

In a small bowl, combine the flour, sugar, cocoa powder, baking powder, and salt.  Whisk in the milk, condensed milk, oil, and vanilla extract until smooth.  Make sure to scrape well around the edges of the bowl.  Mix in the chocolate chips and the bing cherries.

Pour batter into a large mug. Bake in the microwave on high for 70 seconds (1100 Watts microwave). You may add or subtract 5-8 seconds, depending the potency of your microwave.  The bottom of the cake will be moist and the cake will continue to cook as it sets.  It is important not to overcook it.  Serve immediately, topped with ice cream.

If you use black cherries in the batter, serve it with a black cherry ice cream which can be found in supermarkets under the name Amarena Gellato, or you can make the fabulous Cherry Ice Cream from the Just One Cookbook blog.  You can use pitted dark sweet bing cherries in heavy syrup (drained and chopped) to make the ice cream instead of the fresh ones.

If you are using dulce de leche, marshmallow creme, caramel, or peanut butter in the batter, a coffee, dulce de leche, or vanilla ice cream would be more suitable for topping the cake.

Receita em Português:

Bolo de Chocolate na Caneca com Sorvete

Rendimento: 1 caneca grande

Ingredientes:

1/4 xícara de chá de farinha de trigo

1/4 xícara de chá de açúcar

1/4 xícara de chá de chocolate em pó ( o do Frade da Nestlé é o melhor)

1/4 colher de chá de fermento em pó

Uma pitada de sal

2 colheres de sopa de leite

2 colheres de sopa de leite condensado

2 colheres de sopa de óleo

1 colher de chá de extrato de baunilha

1/4 xícara de chocolate bem picado (meio-amargo ou ao leite)

1/3 xícara de cereja , escorrida (opcional)**

** Ao invés de cerejas, você pode usar 2 colheres de sopa de manteiga de amendoim, doce de leite, caramelo, ou nutella. Neste caso, ponha dentro da massa do bolo sem misturar e pressione para submergir.

Modo de Preparo:

Numa tigela, misture a farinha, o açúcar, o chocolate em pó, o fermento e o sal. Misture bem o leite, o leite condensado, o óleo e a baunilha até formar uma mistura homogênea. Raspe as beiradas da tigela e misture bem ao resto da massa. Acrescente o chocolate bem picadinho e as cerejas. Mexa.

Despeje a massa dentro de uma caneca grande. Leve ao microondas em potência alta (1100 watts) por aproximadamente 65 segundos. Acrescente ou diminua de 5 a 8 segundos dependendo da potência do seu microondas. O fundo do bolo ficará molhadinho e continuará a cozinhar mesmo depois de retirado do microondas. É muito importante não assar demais ou ficará seco. Sirva imediatamente com uma bola de sorvete no topo.

Alguns sugestões de sabores para sorvete são: baunilha, doce de leite, café e coco.

  1. Oh my word…I have all of these ingredients except for the sweetened condensed milk…otherwise I’d be making it right now. And I think I’ll make it at night when the kids are in bed so that I don’t have to share :)
