Our triple brigadeiro cheesecake tart is a fusion dessert, inspired by the popular Brazilian brigadeiro fudge balls and the American no-bake cheesecake. When both are combined into an Oreo cookie crust tart shell, you get this: pure decadence! Our effortless brigadeiro cheesecake tart consists of an Oreo cookie crust, no-bake brigadeiro cheesecake filling, and brigadeiro topping, garnished with brigadeiro fudge balls.

A decadent Triple Brigadeiro Cheesecake Tart with an Oreo cookie crust, no-bake brigadeiro cheesecake filling, and brigadeiro topping, garnished with brigadeiro fudge balls.

Ingredients
  • For the Crust:
  • 3½ cups oreo cookies crumbs
  • 1½ sticks (or 12 Tablespoons) unsalted butter, melted
  • For the Filling:
  • 3 (14-ounce) cans sweetened condensed milk
  • ½ cup unsweetened baking cocoa powder
  • 3 Tablespoons unsalted butter, softened
  • 2 teaspoons pure vanilla extract, divided
  • Chocolate sprinkles
  • 1 cup heavy whipping cream
  • 12 oz (or 1-1/2 packages) cream cheese, softened
  • A pinch of salt
  • 7 g unflavored gelatin
  • ¼ cup boiling water
  • For the Topping:
  • Cocoa Powder (enough to sprinkle on top), optional
Instructions
  1. To make the crust: Preheat oven to 350 degrees F. In a medium bowl, combine the Oreo cookie crumbs and melted butter until completely moistened. Press evenly onto bottom and up the sides of a 11-inch non-stick, springform tart or quiche pan. Bake for 8-9 minutes. Place on a rack and let cool.
  2. Prepare the filling: In a non-stick, medium saucepan, stir together the sweetened condensed milk with the cocoa powder until obtaining a homogeneous mixture. Add the butter and cook over medium heat (large burner), stirring constantly with a wooden spoon, for about 7-10 minutes or until the bottom of the pan starts to show through and the brigadeiro mixture runs slow. Remove pan from the heat and stir in 1 teaspoon of vanilla.
  3. Transfer ¼ of warm brigadeiro mixture to a greased dish and let cool on a rack (If desired, it can be refrigerated for 15-20 minutes to make it easier to roll into balls). Grease hands with butter, shape brigadeiro into balls (a tablespoon can be used as measurement), roll in the chocolate sprinkles, and reserve to decorate top of the brigadeiro cheesecake tart. NOTE: Brigadeiro balls should be kept in a clean, airtight container at either room temp, or refrigerated until placed on top of the tart.
  4. Stir in the heavy cream (while brigadeiro mixture is still warm) and the remaining 1 teaspoon of vanilla into the remaining warm brigadeiro mixture until obtaining a homogeneous mixture (about 1-2 minutes), and set aside. Using a stand mixer, beat the softened cream cheese and salt with the paddle on medium speed until smooth (about 1 minute). In a small glass bowl, dissolve gelatin into boiling water, stirring constantly, until completely dissolved (about 2 minutes). Incorporate half (1/2) of the brigadeiro mixture into the cream cheese, beating just until combined and stir in the dissolved gelatin well. Pour mixture into the cooled tart shell and level with a metal spatula. Then, pour in the remaining ¼ of the brigadeiro mixture and immediately spread gently to level. Refrigerate for at least 4 hours or until filling is set.
  5. Before serving, let tart come to room temp for about 10 minutes (to let soften and make it easier to slice), unmold, and sprinkle cocoa powder on top (optional). Decorate triple brigadeiro cheesecake tart with brigadeiro balls on top. Enjoy our Triple Brigadeiro Cheesecake Tart!

Ingredients
  • Para a crosta de biscoito:
  • 3 e ½ xícaras de (chá) de farinha de biscoito Oreo ou Negresco (biscoito moído)
  • 12 colheres de (sopa) de manteiga sem sal, derretida
  • Para o recheio:
  • 3 latas de leite condensado
  • ½ xícara de (chá) de chocolate em pó (cacau em pó)
  • 3 colheres de (sopa) de manteiga sem sal, amolecida
  • 2 colheres de (chá) de essência de baunilha
  • chocolate granulado
  • 1 xícara de (chá) de creme de leite de caixinha
  • 340 g (ou 12 onças) de cream cheese, amolecido
  • Uma pitada de sal
  • 7 g de gelatina sem sabor
  • ¼ de xícara de (chá) de água fervente
  • Para a cobertura:
  • Cacau em pó (o suficiente para polvilhar por cima), opcional
Instructions
  1. Para fazer a crosta: Pre-aqueça o forno a 180 graus C (ou 350 graus F). Em uma tigela média, misture a farinha de biscoito Oreo e a manteiga derretida até formar uma massa umedecida. Pressione no fundo e laterais de uma forma de 28 cm de diâmetro, com aro removível. Leve ao forno por 8 a 9 minutos. Transfira para uma grade e deixe esfriar.
  2. Prepare o recheio: Em uma panela média anti-aderente, misture o leite condensado com o chocolate em pó até obter uma mistura homogênea. Adicione a manteiga e cozinhe em fogo médio (boca grande do fogão), mexendo sempre com uma colher de pau, por cerca de 7 a 10 minutos, ou até que o fundo da panela comece a aparecer e o brigadeiro comece a despregar do fundo. Retire a panela do fogo e misture 1 colher de (chá) de baunilha.
  3. Transfira ¼ da mistura de brigadeiro quente para um prato untado e deixe esfriar sobre uma grade. Se desejar, o briagdeiro poderá ser refrigerado durante 15 a 20 minutos para tornar mais fácil enrolar em bolinhas. Unte as mãos com manteiga, enrole em bolinhas (uma colher de sopa pode ser usada como medida), passe no chocolate granulado e reserve para decorar o topo da cheesecake de brigadeiro. OBS: Os brigadeiros deverão ser mantidos em um recipiente limpo, hermético, à temperatura ambiente ou refrigerado até que seja colocado em cima da cheesecake.
  4. Adicione o creme de leite (enquanto a mistura brigadeiro ainda quente) e 1 colher de (chá) de baunilha ao restante da mistura de brigadeiro quente e mexa bem até obter uma mistura homogênea. Reserve. Na batedeira, bata o cream cheese amolecido e sal em velocidade média até obter uma mistura homogênea (cerca de 1 minuto). Em uma tigela pequena de vidro, dissolva a gelatina em água fervente, mexendo sempre, até dissolver completamente (cerca de 2 minutos). Incorpore metade (1/2) da mistura de brigadeiro ao cream cheese batido, batendo o suficiente para obter uma mistura homogênea. Misture a gelatina dissolvida com uma colher de pau. Despeje a mistura na crosta de biscoito já fria e nivele com o auxílio de uma espátula. Em seguida, despeje o restante da mistura de brigadeiro por cima e espalhe delicadamente. Leve à geladeira por pelo menos 4 horas ou até que o recheio e cobertura de brigadeiro hajam endurecido.
  5. Antes de servir, leve a cheesecake de brigadeiro à temperatura ambiente por 10 minutos, desenforme com cuidado e polvilhe o cacau em pó por cima (opcional). Decore com as bolas de brigadeiro em cima e bom apetite!
